I used a combination of collard greens, kale, and beet greens and it turned out great.&amp;nbsp; I dice the greens as small as I can, and I simmer them for about 20 minutes instead of 15.&amp;nbsp; I also added a teaspoon of &lt;a href="http://www.blogger.com/%3Ca%20href=%22http://www.amazon.com/gp/product/B000FVMT3K?ie=UTF8&amp;amp;tag=bigbotblo-20&amp;amp;linkCode=as2&amp;amp;camp=1789&amp;amp;creative=9325&amp;amp;creativeASIN=B000FVMT3K&amp;quot;&amp;gt;Berbere Spice 2.0 oz by Zamouri Spices&amp;lt;/a&amp;gt;&amp;lt;img src=&amp;quot;http://www.assoc-amazon.com/e/ir?t=bigbotblo-20&amp;amp;l=as2&amp;amp;o=1&amp;amp;a=B000FVMT3K&amp;quot; width=&amp;quot;1&amp;quot; height=&amp;quot;1&amp;quot; border=&amp;quot;0&amp;quot; alt=&amp;quot;&amp;quot; style=&amp;quot;border:none !important; margin:0px !important;&amp;quot; /&amp;gt;"&gt;berbere&lt;/a&gt; spice at the end.&amp;nbsp; Yum!&amp;nbsp; &lt;a href="http://www.xs4all.nl/~westher/recepten/ABESHA%20GOMEN%20(in%20English).htm"&gt;Here is the source of the base recipe.&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;450 g / 1 lb collard greens&lt;br /&gt;60 ml / 4 tbsp olive oil&lt;br /&gt;2 small red or yellow onions, finely chopped&lt;br /&gt;1 garlic clove, crushed&lt;br /&gt;2.5 ml / ½ tsp grated fresh root ginger&lt;br /&gt;2 green chillies, seeded and sliced&lt;br /&gt;150 ml / ¼ pint / 2/3 cup vegetable stock or water&lt;br /&gt;1 red pepper, seeded and sliced&lt;br /&gt;salt&lt;br /&gt;freshly ground black pepper&lt;br /&gt;&lt;br /&gt;Wash the collard greens, then strip the leaves from the stalks and steam the leaves over a pan of boiling water for about 5 minutes until slightly wilted. Set aside on a plate to cool, then place in a sieve or colander and press out the excess water. &lt;br /&gt;&lt;br /&gt;Using a large sharp knife, slice the collard greens very thinly.&amp;nbsp; Once they are in strips you can slice them the other direction to make them into small bits if you wish.&amp;nbsp; (I do not boil first, I slice them finely then add into pan with the oil/onions and toss them around a bit before I add the stock)&lt;br /&gt;&lt;br /&gt;Heat the oil in a saucepan and fry the onions until browned. Add the garlic and ginger and stir-fry with the onions for a few minutes until lightly browned, then add the chillies and a little of the stock or water and cook for 2 minutes.&lt;br /&gt;&lt;br /&gt;Add the greens, red pepper and the remaining stock or water. No biggie, really...but it is the first time a white potato has crossed my lips in a long time.&amp;nbsp; My food was a little weird today because lunch ended up being on the run again and not really enough food.&amp;nbsp; I should have had more protein right after my workout, but it just did not happen.&amp;nbsp; Made up for it at dinner, tho....too much so, maybe.&amp;nbsp; Not enough veggies today.&amp;nbsp; Tomorrow is another day.&amp;nbsp; (It is the avocado....and almonds...yuuuuuummmmm!) Oh well! Fat&amp;nbsp;seems to work well for&amp;nbsp;me as long as I keep my carbs somewhat low. &lt;br /&gt;&lt;br /&gt;So much for trying to vary the amount of calories each day...I seemd to be hitting between 1375 and 1475 every day this week?&amp;nbsp;Not much variance.&lt;br /&gt;&lt;br /&gt;&amp;nbsp;I really ought to be doing tea instead of decaf coffe through the day....but for some reason the coffee keeps winning out. I'm not going to sweat it. I drink lots of water, too. &lt;br /&gt;&lt;br /&gt;I like doing this journal each day...especially when I enter it around 7 pm. It makes it much easier to skip any extra little snacks later because I know how many calories I have had...and...it would be a pain to come back in my office and enter them after I already posted this. alternative during this cookie-filled time of year.&amp;nbsp; Oh, and they taste good frozen, too.&amp;nbsp; :)&amp;nbsp; They are very rich and chocolatey, sort of like a brownie-cookie.&amp;nbsp; Yum.&amp;nbsp; Enjoy.&lt;br /&gt;&lt;br /&gt;Gluten-Free Chocolate-Pecan Cookies&lt;br /&gt;&lt;br /&gt;What you need:&lt;br /&gt;&lt;br /&gt;Parchment Paper or Waxed Paper&lt;br /&gt;2 1/2 cups of Pecans (you can toast them in a 350 oven for 15 minutes first, if you want)&lt;br /&gt;3 cups of confectioners' sugar&lt;br /&gt;1/2 cup plus 3 tbsp unsweetened cocoa powder&lt;br /&gt;1/4 tsp salt&lt;br /&gt;4 egg whites&lt;br /&gt;1&amp;nbsp;tablespoon vanilla extract&lt;br /&gt;&lt;br /&gt;Heat oven 350.&lt;br /&gt;&lt;br /&gt;Line 2 baking sheets with parchment paper or waxed paper.&lt;br /&gt;Finely chop pecans.&lt;br /&gt;&lt;br /&gt;Whip the four egg whites until stiff peaks form.&lt;br /&gt;&lt;br /&gt;Mix sugar, cocoa and salt into bowl&lt;br /&gt;&lt;br /&gt;Stir in morning....sounds good.&amp;nbsp; A nice way to have dressing with your turkey and still remain within the Hunter guidelines.&amp;nbsp;&amp;nbsp;I am not&amp;nbsp;sure if I would do&amp;nbsp;this for Thanksgiving, or there might be a mutiny among family members.&amp;nbsp; But I plan on buying a couple extra turkeys or turkey breasts (they are so inexpensive this week and next!)...and I might try this with those.&amp;nbsp; Enjoy.&lt;br /&gt;&lt;br /&gt;1 cup dried cherries&lt;br /&gt;2 cups (11 ounces) wild rice, rinsed&lt;br /&gt;2/3 cup tawny or ruby port&lt;br /&gt;2-4 tablespoons butter&lt;br /&gt;3 medium celery ribs finely chopped&lt;br /&gt;1/3 cup celery leaves, finely chopped&lt;br /&gt;1/2 cup minced shallots&lt;br /&gt;1 cup toasted slivered almonds&lt;br /&gt;4 teaspoons chopped fresh sage or 2 teaspoons dried sage&lt;br /&gt;3/4 teaspoon salt&lt;br /&gt;1/2 tesapoon freshly ground black pepper&lt;br /&gt;1/4 cup turkey or chicken stock, or reduced sodium broth&lt;br /&gt;&lt;br /&gt;In a small bowl, mix the dried cherries and port and let stand while preparing the dressing.&lt;br /&gt;&lt;br /&gt;Bring a large pot of lightly salted water to a boil over high heat.&amp;nbsp; Add the wild rice and reduce the heat to medium.&amp;nbsp; Cook until the wild rice is tender and most of the grains have burst, 45 to 60 minutes.&amp;nbsp; Drain well and rinse under cold running water.&amp;nbsp; Place the rice in a larger bowl.&lt;br /&gt;&lt;br /&gt;In a large skillet, melt the butter over medium heat.&amp;nbsp; Add the chopped celery and cook until crisp-tender, about 5 minutes.&amp;nbsp; Add the shallots and celery leaves and cook until softened, about 2 minutes.&amp;nbsp; Add the cherries and their soaking liquid (port).&amp;nbsp; Boil until the port has almost completely evaporated, about 3 minutes.&amp;nbsp; Stir the mixture into the wild rice, along with the almonds, sage, salt, and pepper.&amp;nbsp; &lt;br /&gt;&lt;br /&gt;Use to       s with 1-2 tsp olive oil in a nonstick (and oven safe) pan.  Toss in some small bits of spinach or kale, too, if you like.&lt;br /&gt;&lt;br /&gt;While the veggies are cooking, turn your broiler to high.&lt;br /&gt;&lt;br /&gt;Season veggies with garlic and salt as you like.&lt;br /&gt;&lt;br /&gt;Whip up two or three eggs in a bowl, then pour them over the sauteed veggies once the veggies are slightly browned. Keep the eggs and veggies on a medium high heat for about 3 minutes (until you can see the eggs cooking around the edges).  Do not stir. &lt;br /&gt;&lt;br /&gt;Take pan off the burner and put under the broiler for 3-4 minutes or until lightly brown on top and the egg is cooked to the middle.&lt;br /&gt;&lt;br /&gt;Slide out of the pan onto a plate. Sprinkle with 1/4 cup cheese, if you wish...and/or garnish with 1/3 avocado and salsa. Weight is literally melting off of me and my cravings are just gone. I am finding that when I have grains...even those approved by the Hunter diet and in small quantities....my body just freaks out a bit. Carbs make me crave more carbs...usually craving unhealthy carbs. There must be some brain connection here...not really sure what....the insulin must trigger something. But....when I stick to a paleo-type diet my body just works remarkably better! Go figure. I also seem to retain water weight when I am eating grains...and it drops away fast when I cut the grains.&lt;br /&gt;&lt;br /&gt;I do not think I am in ketosis...though I might be on the edge. The prior three days I have gotten between 40-60 net carbs. Today, I am staying lower on carbs just to see. I did a lot of reading last night on the cyclical ketogenic diet....which was fascinating. &lt;a href="http://www.musclenet.com/getbulky/Info/WeightLoss/KetogenicDieting.htm"&gt;http://www.musclenet.com/getbulky/Info/WeightLoss/KetogenicDieting.htm&lt;/a&gt; &lt;br /&gt;I do not think I would follow exactly what the male body builders do....but....I might take some of the principles and apply them to what I am doing...mostly the low carb aspect and the one-day-a-week reload. (but...not a pizza sort of reload...more like a sweet potato and fruit sort of reload)&lt;br /&gt;&lt;br /&gt;I went to the doc today to review all my blood and lab stuff. I am still making antibdoies against my own thyroid. This is an autoimmune issue that is not that uncommon with the Hunter Geno Type. I also have some malabsorption issues with protein and vitamins/minerals that was likely caused by gluten. So, I need to calm my immune system....and repair/rebuild my gut. She has me starting on a protocol that should address a lot of the underlying issues. We are starting with the hypothalumus and pituitary.....and then working our way outward. Even more hardcore than true Hunter, actually. I am just doing lean meat, eggs, and veggies for now.  Grains, nuts, chocolate (even the tiny bit I was eating sometimes), and fruit are all off the table for now. I have 35-40 more pounds to ditch and these items have a bit too many calories compared to nutrient content for me at this point.&lt;br /&gt;&lt;br /&gt;Aaaaah....meat...and veggies....! You know.....it could be worse.  Thank goodness I like meat and veggies!&lt;br /&gt;&lt;br /&gt;Lunch today was 5 oz of top sirloin sauteed with mushrooms in a bit of ghee....till nice and brown on the outside and still pink on the inside.  As a side, I had 1 cup of fresh salsa (very spicy..we made it yesterday..yum) with 3 celery stalks to scoop it up.&lt;br /&gt;&lt;br /&gt;That works. Weight is coming back down. I think I got a little over excited about my gluten-free flours.  Grains of any kind are still not really my friend until I get the rest of this weight off.  Sigh.  Also, I have been eating a bit too much fruit, I think....fruit is healthy, but it does have quite a few more calories than veggies.&lt;br /&gt;&lt;br /&gt;Today I have eaten on plan all day and I feel like I am back on track. &lt;br /&gt;&lt;br /&gt;Breakfast:  2 eggs, one whole onion, 1 cup mushrooms, 1 cup zucchini (all cooked with 1 tsp ghee)&lt;br /&gt;Lunch:  5 ounces top sirloin, 2 cups Veggie Ratatouille&lt;br /&gt;Dinner:  5 ounces drained and rinsed ground beef, 1/2 cup tomato sauce, 1/2 cup brown and wild rice&lt;br /&gt;&lt;br /&gt;Phew. Eat a couple cups along with your favorite Hunter meat. And fast! And...no leftovers to be tempted by. It is about 280 calories with 9 grams of protein. I found it to be very filling and satisfying.&lt;br /&gt;&lt;br /&gt;1/4 cup rice flour (Brown would be best, but I only had white)&lt;br /&gt;1/2 tsp baking powder&lt;br /&gt;1/2 tsp cinnamon&lt;br /&gt;1 egg&lt;br /&gt;1 tsp butter (or flaxseed oil)&lt;br /&gt;1.5 tsp honey (or raw sugar, or splenda, or stevia...you pick)&lt;br /&gt;2 Tbsp canned pumpkin (not the pumpkin pie stuff....just plain pumpkin)&lt;br /&gt;&lt;br /&gt;Mix everything well in a large coffee mug. And...omg.....this is just SO SO good and very easy to make! I got dried chick peas and cooked them instead of using a can....but a can works fine, too.&lt;br /&gt;&lt;br /&gt;5 Tablespoons has 133 calories, 4 grams of protein, 6 grams of healthy fat, 3 grams of fiber. I had it on some gluten free rice crackers and also used as a dip for raw red pepper.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Hummus III&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;"As a spread, dip or garlicky pita filling, classic hummus is both delicious and satisfying. It was not a huge change to what I have been doing since March, but the two small changes I made showed up HUGELY on the scale this week.  No gluten and no dairy for one week translated to a SEVEN pound weight loss for me.  (I have averaged a little under 2 pounds a week loss since March...so this was almost nutty!)&lt;br /&gt;&lt;br /&gt;I am going to assume this was mostly fluid retention from eating bits of dairy and gluten over the past few months.  But, I will say that I feel GREAT after eliminating both this week.  A good reason to stick with my Hunting kin.  I hope some of you out there are able to find me. When I decided last week to truly embrace my Hunter Geno Type, I was excited to add rice back in.  The GOOD kind of rice.  Here is a recipe I cooked up yesterday.  I froze half of it so I have an easy way to add healthy grains to future meals. &lt;br /&gt;&lt;br /&gt;2 cups of Long Grain Brown and Wild Rice&lt;br /&gt;1/2 cup black Quinoa&lt;br /&gt;1/2 cup regular Quinoa&lt;br /&gt;3 Tbsp Chia Seeds&lt;br /&gt;1 Tbsp flaxseed oil&lt;br /&gt;1 tsp salt (or less....up to you...)&lt;br /&gt;5 and a half cups water (or broth)&lt;br /&gt;&lt;br /&gt;I cooked this in my microwave using my super cool microwave rice cooker.  I do 12 minutes at full power, then 15-18 minutes at half power.
